Saucy Pepper Steak

 This is definitely a favorite dish that I have made many times.  I like that it has carbs, veggies, and protein all in one shot.  It’s pretty healthy too – low on calories and high in carbs and protein (high in the sodium area too, though).  The different bell peppers give the dish a nice pop of color.  Also, I love BBQ sauce and like the unique taste of mixing it with soy sauce, garlic, and pepper. 


The only thing that I sub in this dish is Trader Joe’s Steak-less Strips – they work very well as a replacement.  This is a very easy dish to make and presents well ;-)

Carrot Burgers with Fries

I’ll tell you a secret – I’ve never made my own veggie burgers, even though I’ve been a vegetarian for 14 years!  I finally decided to try and this Carrot Burger recipe looked really interesting.  The only changes I made was using 2 cups unseasoned breadcrumbs instead of cornflakes and adding 1 egg.  I will definitely either use less breadcrumbs next time or another egg – they were a little dry.  Despite the dryness, though, they were tasty – not as carroty as you would expect.  Pretty low on protein, though, but once in awhile, that’s OK.
Of course, to go along with burgers, you need fries.  I wanted to do something a little healthy, so I just tossed Russet potato wedges with salt, pepper, and cooking spray.  I baked them for 12 minutes (each side) at 425 degrees – next time, I’ll bake them longer or at a higher temp, they were slightly underdone.  Still tasty with Heinz ketchup though!

Mac & Cheese with Hot Dogs

My mom made a cheese sauce a few years ago that I absolutely loved – velveeta, sour cream, and ranch dressing (or dry ranch dip mix).  I have been making it ever since and love to toss with pasta to make some Mac and Cheese.  You take about 8 oz. of velveeta, mix with about 1/2 to 1 cup sour cream and about 3-4 T ranch dressing (or 1/2 packet dry ranch dip mix).


I chopped some green peppers and added them to the boiling water for about one minute while cooking the pasta.  To up the protein, I added in a Smart Ones hot dog.  Yummy!  The cheesy/ranch sauce gives it a new twist – the only issue is that velveeta congeals pretty quickly, so you have to eat it fast J

“Chili” Cheese “Dog”

I must tell you  – I have never had a Chili Cheese Dog.  Alas, when I was a kid, I liked my hot dogs with a slice of American cheese, ketchup, and mustard.  No chili.  I was walking through Trader Joe’s and saw that they had a can of Vegetarian Chili (organic too) – so I started thinking about it.  Could I?  Should I?  The answer – YES!  Well, this chili is probably not the best for hot dogs – what with all the beans, but that’s okay.  It was nice to try something new.  I used a Martin’s Long Roll (love Martin’s – plus it’s made in my hometown) and topped the dog and chili with shredded Mexican cheese.  Overall, tasty and I’ll probably do it again J

Brandywine Brewing Company - Greenville, DE

Love, love, love this restaurant.  We go at least once every two months (and we don’t repeat a lot of restaurants).  I’ve had a few of their plates, but this time I chose a sandwich that was on Special – not so good – I forget what it was called, but the sauce on it just didn’t work.  And, actually, they took my favorite sandwich off of the menu (grilled vegetables with goat cheese, yum, yum).  I definitely recall their Hot Soft Pretzels – so tasty – and apple mustard is delish (the hot horseradish was too hot for me – I don’t like the feeling of my sinuses being cleared with one quick taste).  I do recommend this restaurant for vegetarians because they have a number of options and great service.  Not to mention a full beer selection!

9/8/2011 Update:

On our most recent trip to BBC, we decided to get the Hot Soft Pretzels as an appetizer.  Very chewy, but not buttery (like an Auntie Anne's pretzel).  That plays well with the two specialty mustard sauces - the apple mustard is very good, not too much of an apple flavor and not too much of a mustard flavor.  The horseradish sauce was hotter when we had it a year ago (or my taste buds are changing).  I can still only take just a little bit, but the horseradish isn't enough to burn my nostrils :-)

I decided to have the Warm Goat Cheese and Spinach Salad as my entrée.  The goat cheese is in multiple pieces, which I like (as compared to one big piece in the middle).  The salad came topped with candied walnuts, sundried tomatoes and cranberries, and some red onion.  All of these helped add a good crunch factor to the soft spinach and goat cheese.  The dressing was surprisingly tasty.  I'm not a fan of maple, but mixed as a maple sherry vinaigrette - yum!

For dessert, I shared the Lava Cake with Strawberry Sauce with my husband.  Overall, tasty, warm, and full of chocolate - just what I need at the end of a good meal!

Public House Wilmington

My fiancée and I joined two friends for a lunch at Public House.  The weather was nice and the Wilmington Grand Prix was in progress, so we were able to enjoy our meals outside. 

 I love butternut squash, so I ordered that salad (mixed greens, candied pecans, shaved red onion, aged gouda with maple vinaigrette) – there was so much gouda!  Not a bad thing.  I am not a fan of maple, but the vinaigrette was not overpowering and worked with the salad.  The pecans and red onion gave it a nice crunch.  

For my entrée, I ordered the Blackened Shrimp Pasta – sans shrimp.  The gemelli pasta is mixed with asparagus tips and tomatoes, topped with a creole cream sauce.  I checked first to make sure that the sauce was vegetarian (it is!).  The pasta was okay – I actually added more Cajun Seasoning to my leftovers (there were at least two more servings in addition to the one I ate at lunch).  I don’t think I would order it again.  Maybe next time I’ll just stick to the salad and perhaps a side.

Sausage, Biscuits, and Gravy

This meal was not as good as I expected it to be.  My fiancée really likes this dish (with real sausage), so I thought it might be nice to make it for him vegetarian style.  I guess I’ll have to go with a different recipe for both the gravy and the biscuits next time.

The biscuits did not rise at all – and I followed the recipe exactly.  In addition, they tasted kind of floury.  Not good.  I put them into a Tupperware container and I would have thought they were sugar cookies if I didn’t know better!  The country gravy also did not taste right to me – I’ve never had it before, but I once again followed the recipe without a great result.  Adding more pepper to it helped, but it still needs something more.  The best part of the dish was the Morningstar Farms Sausage Links.  I may try this whole thing again, but not with the same recipes.

Squash Stuffed with Ricotta

I liked this meal – the squash stayed crisp and moist and everything worked together very well, but I may use more garlic next time.  The mixture inside the squash was a little runny, but that’s because I didn’t squeeze out the spinach as much I should have.  Next time I’ll use paper towels in addition to just squeezing it. 

I used six large squash instead of 8 – I wouldn’t have had enough filling if I did that!  I used my electronic steamer instead of steaming the squash over boiling water – it worked very well.  I used Low Fat Ricotta instead of full fat and didn’t lose any taste.  We had some fresh basil, so we threw that in with the parsley.  I served Classico Four Cheese sauce on the side for dipping – instead of the Tomato and Basil.  Finally, I sprayed the top with fake butter spray instead of brushing the tops with melted butter. 

I served with a Trader Joe’s Italian Sausage to increase the protein amount.  If you’re only having one, I would also suggest a piece of garlic bread or something else Italian-ish.

Overall, a tasty and filling meal that I plan to make again.

Trader Joe’s Arugula & Parmigiano Reggiano Ravioli w/ Tomato-Cream Sauce

Yum, yum!  

I saw the ravioli at Trader Joe’s and liked the sound of it – something different, not your usual cheese ravioli.  I didn’t want to do a plain tomato sauce with it, so I tried out a new recipe (http://allrecipes.com/Recipe/Tomato-Cream-Sauce-for-Pasta/Detail.aspx).  I had concerns that the Tomato-Cream sauce wouldn't taste good with the ravioli, so I kept them separate until they were on the plate together.  It tasted really good!  

I used less onion in the sauce (probably about 1/2) and used light cream instead of heavy.  I liked the flavor, but I will leave it on the burner for a shorter period of time or use more cream next go around – it wasn't as creamy as I like my cream-based sauces.  (That’s OK though!)  It made three servings – perfect for me, the fiancée, and the next day’s lunch!

Mexican "Chicken" Casserole

I’ve made this recipe many times and it is always a winner.  Some people have made comments online that they don’t like that the tortillas get soggy from the liquid – but I think it’s just fine.  

I use Trader Joe’s vegetarian chicken strips, but normally follow the recipe.  This time I doubled the amount of cream cheese (4 oz.) so as to be more creamy – it worked!  I used medium salsa, but added a bit more cumin, so there was a good spiciness to the casserole – not too spicy, not bland.  The green pepper provides a crunch effect to the dish (good, because everything else is soft).  I really like this casserole because not only is it very scrumptious, it is easy to make and high in protein – great for a vegetarian!

The Windy City

My fiancee and I took a short trip to Chicago and had a wonderful time.  It was my first visit and I cannot wait to go back.  Not only is it a beautiful city with a fantastic skyline and lots of things to do, but it also has some awesome food.  Keeping in line with my blog ideals, I’ll stop talking abou the trip and start relaying my memories of the food J

Our first night, our hosts took us to Tuscany, an Italian restaurant on Taylor Street.  We had to eat in the back room because we did not have reservations, and it was kind of loud, but the food was very good.  The front of the restaurant had a nice atmosphere with the typical Italian style painting and decorations on the walls.  Our meal started out with a nice presentation of crushed garlic with olive oil.  Our waiter crushed the garlic at our table and added any spices to our liking.  This kind of attention indicated to me that this was going to be a good meal! 

I started off with the Barbe Rosse salad - roasted red beets, hazelnuts, citrus segments, goat cheese, frisee, butter lettuce, sherry vinaigrette.  The serving was enough for two people, so they brought it in a bowl and gave us extra plates.  It was tasty, not overly dressed with the vinaigrette.  I love goat cheese on a salad because it adds a great creamy texture.  I also enjoyed having the hazelnuts in the mix to add some crunch.  After my salad, I enjoyed the Ravioli Alla Pera – I had a really tough time deciding what to order because there are a few tasty-looking vegetarian options (or items that can easily be made vegetarian).  However, since I was running a half marathon the next morning, I chose something that wasn’t spicy or different than my normal eating.  The ravioli was filled with roasted pears and was covered in a sauce consisting of more pears, parmigiano, toasted nuts, sun-dried tomatoes, and mascarpone cream.  So yummy!  It reheated well the next day for lunch, too (since they gave such large portions).  We finished with a nice chocolate cake for dessert – not too big and not too rich – perfect way to end!

After recovering from the half marathon, my fiancée and I headed to The Art Institute of Chicago.  It was a rainy and windy day, so we wanted to limit our time outside.  While there, my appetite kicked in and we stopped at Caffè Moderno.  I was surprised to find multiple veggie items there and had some of the vegan Tomato Basil soup with a wheat roll on the side.  The soup was very good and topped with some sesame seeds – it also had nice little kick to it.  The bread held up really well when dipped into the soup.  It was a very nice snack (unfortunately, not able to carry it around while looking at the art, but that’s okay.)  http://www.artic.edu/aic/visitor_info/restaurants.html

Connie's Pizza
One of my requests to our hosts was to indulge in some Chicago-style pizza.  My fiancée told me that true Chicago-style would mean I’d only be able to eat half a slice, so we opted for deep dish.  We ordered in from Connie’s.  I got the House Salad with a Garlic Ranch dressing, the Veggie Pizza, and the Cookie Monster to share.  The salad was your typical takeout salad – lettuce, tomatoes, onions – and the dressing was very garlicy (not a bad thing!).  The Veggie Pizza was topped with broccoli, onions, mushrooms & sliced tomatoes.  I am a huge fan of bread, cheese, and veggies, so this was a great combo!  I really liked the taste of it and it was quite filling.  We finished our dinner with the Cookie Monster – a much more massive dessert than we expected.  It consisted of four large chocolate chip cookies topped with four scoops of vanilla ice cream, a few dollops of whipped cream, and smothered in chocolate sauce.  Fantastic way to end this delicious meal!  http://www.conniespizza.com/

P.S. – the pizza tasted great cold two mornings later when we flew out – I saved two slices for lunch J

Our final culinary hurrah in Chicago was a trip to Harry Caray’s Tavern at Navy Pier.  When faced with the decision of whether or not to get a veggie burger at a restaurant, I usually opt not to because they are normally cooked on the same grill.  I made an exception this time because it had goat cheese!  The original burger comes with a Kalamata Olive Spread, but I asked for it without because I am no fan of olives.  It did come topped with goat cheese, arugula, tomato, and onion – all laid out on a whole wheat bun.  I had a side salad instead of fries, to try to keep it a little healthy.  The patty wasn’t that great, but the goat cheese made the meal.  I actually ate the whole thing.  One word of caution though, I got an upset stomach afterwards – possibly because of it being cooked on the same grill as meat.  I don’t have any proof, just sharing my concerns.  (FYI – there are other veggie options such as pasta and pizza)

I love Chicago and the food is delicious – I cannot wait to go back to savor more of their delectable treats!
