Turkey-less Turkey Roast, Creamed Corn, and Mashed Cauliflower


Turkey-less Turkey Roast, Creamed Corn, and Mashed Cauliflower (Total Time: 1 hour, 15 minutes, Servings: 6+)

I decided to make a Thanksgiving meal in January.  I bought a Turkey-less Turkey Roast at Trader Joe’s (which comes stuffed with vegan stuffing and a side of gravy) and cooked it according to package directions with a bunch of baby carrots and one pre-trimmed leek.  I coated the veggies with olive oil, salt and pepper.  To go along with my Turkey-less Turkey, I made Creamed Corn and Mashed Cauliflower.  I have heard a lot of positive things about Mashed Cauliflower, so I was really excited to try it.  Well, I had a major letdown with the recipe I used – both my husband and I found it extremely bland and thought it tasted way too much like cauliflower (even with the gravy from the Roast).  I ended up throwing over half of it in the trash.  The Creamed Corn, on the other hand, was delicious! I used fat-free half and half to cut down on the calories and actually used more corn than I was supposed to.  It was still really creamy and had big, bold flavors from the “cream”, milk, and margarine.  Below are the recipes for the Creamed Corn and Mashed Cauliflower with some additional notes.  Even though I did not enjoy my first experience with Mashed Cauliflower, I do plan on trying a different recipe sometime in the future.

Cream Corn Like No Other (adapted from AllRecipes, Servings: 4-5, Total Time: 15 minutes)

Ingredients
·         1 (16 oz.) packages frozen corn kernels, thawed
·         ½ cup fat-free half and half
·         ½ tsp. salt
·         1 Tbsp. granulated sugar
·         1/8 tsp. freshly ground black pepper
·         1 Tbsp. margarine
·         ½ cup skim milk
·         1 Tbsp. all-purpose flour
·         1/8 cup freshly grated Parmesan cheese

Directions
1.      In a skillet, over medium heat, combine the corn, half and half, salt, sugar, pepper and margarine.
2.      Whisk together the milk and flour, and stir into the corn mixture.
3.      Cook stirring over medium heat until the mixture is thickened, and corn is cooked through. Remove from heat, and stir in the Parmesan cheese until melted. Serve hot.

I wanted to half the recipe, but just decided to use the whole package of corn – it still turned out creamy.  Both my husband and I really enjoyed this dish and I look forward to making it again.

Ruby Tuesdays Creamy Mashed Cauliflower (slightly adapted from Food.com, Servings: 6+, Total Time: 50 minutes)

Ingredients:
·         1 head cauliflower
·         ¾ cup water
·         1 Tbsp. cornstarch
·         1/3 cup fat free half and half
·         1 tsp. granulated sugar
·         ¾ tsp. salt
·         ¼ tsp. white pepper
·         1/8 tsp. garlic powder
·         1/8 tsp. onion powder

Directions:
1.      Divide head of cauliflower into florets that are roughly the same size.
2.      Steam cauliflower pieces over boiling water for 15 to 20 minutes or until cauliflower is tender. (I used my electric steamer.)
3.      Drain the cauliflower and toss it in a bowl of ice water to end the cooking process.
4.      When the cauliflower has cooled, put the florets in a food processor along with ¼ cup water.
5.      Puree the cauliflower on high speed until smooth, but with some very small pieces of cauliflower remaining for just a bit of texture.
6.      Pour all of the pureed cauliflower into a medium saucepan.
7.      Dissolve the cornstarch in the remaining ½ cup of water and add the solution to the cauliflower.
8.      Add the half and half, sugar and remaining spices and stir.
9.      Set the saucepan over medium heat and cook, stirring often for 5-10 minutes or until thick.

My cauliflower mash was a little runny and, as I said previously, bland.  Maybe more garlic and/or onion powder would give it a better taste.  I’ll try another recipe in the future.

Enchilada Bake

Delicious! (Even with the adjustments I made.)  I used 1 box of Trader Joe's Chickenless Chicken Strips and 1 box of their Steakless Steak Strips.  I cut them up into small pieces so it was closer to a shredded consistency.  I added about 3/4 of a large green pepper to the mix when I added the jalapeno peppers.  I also only used about 1/2 a package of Taco cheese.  Finally, I omitted the corn tortillas and spooned the filling into wheat tortillas.  It was a little messy, but that's fine with me!

This had a nice spice to it, not too overwhelming (I used medium enchilada sauce) - almost a slow heat that built while eating the tortilla.  I did not use sour cream, but that might help alleviate anybody's concerns with spice.  The top was very cheesy looking, but it definitely mixed well with the taste.  To cut back on the liquid, I might use less enchilada sauce next time or add the corn tortillas (that would definitely cut back on the extra liquid).  A definite keeper!

Summerly Squash


We were give a huge zucchini and summer squash from an avid gardener, so I needed to make a dish based on these two ingredients.  The Summerly Squash dish is good, but I think could have more flavor (possibly because I didn't use the Bay Leaf).

I used Pam instead of vegetable oil and still got the vegetables to a nice crisp-tender state.  I drained one can of diced tomatoes with oregano and basil and used it instead of medium tomatoes to hopefully enhance the Italian flavors - it also resulted in more of a "sauce".  I skipped the bay leaf because we didn't have any - this was probably my downfall.  The dish was still good - and I added some Trader Joe's Italian Sausageless Sausage for a kick of protein.  Overall, tasty, but possibly more flavor needed with additional herbs (or a Bay Leaf!).

Saucy Pepper Steak

 This is definitely a favorite dish that I have made many times.  I like that it has carbs, veggies, and protein all in one shot.  It’s pretty healthy too – low on calories and high in carbs and protein (high in the sodium area too, though).  The different bell peppers give the dish a nice pop of color.  Also, I love BBQ sauce and like the unique taste of mixing it with soy sauce, garlic, and pepper. 


The only thing that I sub in this dish is Trader Joe’s Steak-less Strips – they work very well as a replacement.  This is a very easy dish to make and presents well ;-)

“Chili” Cheese “Dog”

I must tell you  – I have never had a Chili Cheese Dog.  Alas, when I was a kid, I liked my hot dogs with a slice of American cheese, ketchup, and mustard.  No chili.  I was walking through Trader Joe’s and saw that they had a can of Vegetarian Chili (organic too) – so I started thinking about it.  Could I?  Should I?  The answer – YES!  Well, this chili is probably not the best for hot dogs – what with all the beans, but that’s okay.  It was nice to try something new.  I used a Martin’s Long Roll (love Martin’s – plus it’s made in my hometown) and topped the dog and chili with shredded Mexican cheese.  Overall, tasty and I’ll probably do it again J

Trader Joe’s Arugula & Parmigiano Reggiano Ravioli w/ Tomato-Cream Sauce

Yum, yum!  

I saw the ravioli at Trader Joe’s and liked the sound of it – something different, not your usual cheese ravioli.  I didn’t want to do a plain tomato sauce with it, so I tried out a new recipe (http://allrecipes.com/Recipe/Tomato-Cream-Sauce-for-Pasta/Detail.aspx).  I had concerns that the Tomato-Cream sauce wouldn't taste good with the ravioli, so I kept them separate until they were on the plate together.  It tasted really good!  

I used less onion in the sauce (probably about 1/2) and used light cream instead of heavy.  I liked the flavor, but I will leave it on the burner for a shorter period of time or use more cream next go around – it wasn't as creamy as I like my cream-based sauces.  (That’s OK though!)  It made three servings – perfect for me, the fiancĂ©e, and the next day’s lunch!
